Recipe for August
Thai-Style Chicken and Baby Corn Soup
150g whole baby corn
1 tbsp oil
2 stems lemon grass, white part only, thinly sliced
2 tbsp grated ginger
1 red chilli, finely chopped
1 ltr chicken stock
1 ½ cups (375ml, 1 tin) coconut milk
250g chicken breast, finely chopped
130g creamed corn
1 tbsp soy sauce
2 tbsp chopped chives
1 thinly sliced red chilli
Heat the oil, add the lemon grass, ginger, spring onion and chilli, sweat for one minute or so. Add the stock and coconut milk and bring to the boil. DO NOT COVER!! or the coconut milk will curdle.
Add the baby corn, chicken and creamed corn and simmer until soft. Add the soy sauce, then garnish with the sliced chilli and chives and serve.
